Sensational Samosas and Rockin' Raita!

These Samosas are a delicious snack filled with goodness and flavour that you can make at home with your kiddies!

Ingredients
  

  • 1 tbsp Cooking Oil
  • 1 pack samosa/spring roll pastry (defrosted)
  • 1 medium Potato (Peeled)
  • 1 Carrot (small)
  • 1 Onion (Brown)
  • 50 g Peas
  • 50 g Sweetcorn
  • 1/2 tin Pre Cooked Chickpeas
  • 1/2 bunch Fresh Corriander
  • 1/2 tsp Curry powder
  • 1/2 tsp Paprika
  • 1 tsp Crushed garlic puree
  • 1 pinch Chilli flakes (optional)
  • 1 tsp Sesame/poppy seeds to sprinkle
  • 200 g Greek Yogurt
  • 1/2 Cucumber
  • 2 Cloves Garlic (or pre crushed)
  • 1 Pinch Salt and Pepper

Instructions
 

  • Finely dice your potatoes
  • Boil potatoes for 5 minutes until semi soft
  • Drain and allow to cool and dry
  • Peel the carrot
  • Finely dice the carrot and onions and add to mixing bowl
  • Add peas, sweetcorn and chickpeas
  • Rip and twist in some fresh coriander
  • Add the potatoes
  • Add the spices (you can absolutely tweak the amounts) and stir well
  • Cut your Samosa pastry down the middle to make rectangular strips
  • Spoon the mixture onto your Samosa pastry (a spoon full at the bottom) and fold into triangles using the whole strip. Use the bottom right corner, bring it over to the left side and fold to make the initial triangle shape - roll over and over keeping the triangle shape throughout - check out the how to image
  • Brush samosas in oil (we love garlic oil but any will do!)
  • Sprinkle over your seeds
  • Place onto a baking tray and bake for 10 mins or until golden brown and crisp
  • Whilst the samosas are baking, in a separate bowl combine your yoghurt and salt and pepper
  • Peel, crush and finely chop your garlic (you can use pre crushed) and add
  • Grate your cucumber and place on some kitchen paper to absorb the water for 2 minutes
  • Add the cucumber and mix
  • Garnish with some fresh coriander
