Nifty Nachos!
These AMAZING nachos are delicious and nutritious! They are something you can easily make with your kiddos and be sure they will DEVOUR!
Ingredients
- 4 Large Tortilla wraps You can always use more!
- 3 Oil We LOVE to use garlic oil but you can use any that you have
- 1 tsp salt and pepper
- 1 tsp Sweet and smokey paprika You can use a hot paprika or even add chilli too!
- 1 Capsicum Any colour you like - yellow are a nice sweet addition to this dish!
- 1 Large Tomato
- 1 Red onion
- 1 tbsp Crushed Garlic
- 2 tbsp Mexican seasoning
- 1 tsp Ground cumin powder
- 1 tsp Mixed herbs
- 4 tbsp Black Beans You can add as much as you like - these are an amazing source of protein and fibre!
- 4 tbsp Sweet corn You can add as much as you like - Sweet corn is amazing for digestion and full of vitamin C!
- 2 tbsp Red Kindey beans You can add as much as you like - Red kidney beans are a great source of protein, just used tinned so they are prepared properly!
- 400 g Beef mince
- 200 ml Passata or tinned crushed tomatoes
- Grated cheese to serve with
- Corriander to serve with
- Sour cream to serve with
- Lemon to serve with
Instructions
- Heat the oven to 180c
- Safely slice the tortilla wraps into triangle shapes (these will become your nachos so not too small)
- Place in a large bowl
- Add the oil and toss - you want to cover the nachos in a fine coating of the oil
- Add the salt and pepper to season - toss through
- Add the Paprika to season - toss through
- Transfer the nachos to 2 baking trays and scatter over the trays so that they can bake and get nice and crispy!
- Place the trays of nachos into the oven - bake for approximately 10 mins or until golden and crispy. Take out after 5 minutes and move around if they are not baking evenly
- Remove the nachos from the oven once baked and allow to cool
- Slice and dice your capsicum, onion, and tomato
- Add a splash of oil to a large pan and add in your vegetables
- Stir through the crushed garlic
- Add the crushed cumin and herbs and stir through
- Place your pan on a medium heat
- Once the pan is warm - add your Mexican seasoning and stir through
- Add the beef mince and cook for 10 minutes until the meat has browned
- Whilst the meat is simmering add the black beans, kidney beans and sweetcorn and stir through
- Add the passata or tinned crushed tomatoes and stir through
- Allow to simmer for a couple of minutes
- Serve the home made nachos with the meat and bean mixture. Add cheese, coriander, sour cream and lemon to taste
