  • 400 g Beef mince
  • 200 ml Passata or tinned crushed tomatoes
  • Grated cheese to serve with
  • Corriander to serve with
  • Sour cream to serve with
  • Lemon to serve with

Instructions

  • Heat the oven to 180c
  • Safely slice the tortilla wraps into triangle shapes (these will become your nachos so not too small)
  • Place in a large bowl
  • Add the oil and toss - you want to cover the nachos in a fine coating of the oil
  • Add the salt and pepper to season - toss through
  • Add the Paprika to season - toss through
  • Transfer the nachos to 2 baking trays and scatter over the trays so that they can bake and get nice and crispy!
  • Place the trays of nachos into the oven - bake for approximately 10 mins or until golden and crispy. Take out after 5 minutes and move around if they are not baking evenly
  • Remove the nachos from the oven once baked and allow to cool
  • Slice and dice your capsicum, onion, and tomato
  • Add a splash of oil to a large pan and add in your vegetables
  • Stir through the crushed garlic
  • Add the crushed cumin and herbs and stir through
  • Place your pan on a medium heat
  • Once the pan is warm - add your Mexican seasoning and stir through
  • Add the beef mince and cook for 10 minutes until the meat has browned
  • Whilst the meat is simmering add the black beans, kidney beans and sweetcorn and stir through
  • Add the passata or tinned crushed tomatoes and stir through
  • Allow to simmer for a couple of minutes
  • Serve the home made nachos with the meat and bean mixture. Add cheese, coriander, sour cream and lemon to taste
