Heat the oven to 180c
Safely slice the tortilla wraps into triangle shapes (these will become your nachos so not too small)
Place in a large bowl
Add the oil and toss - you want to cover the nachos in a fine coating of the oil
Add the salt and pepper to season - toss through
Add the Paprika to season - toss through
Transfer the nachos to 2 baking trays and scatter over the trays so that they can bake and get nice and crispy!
Place the trays of nachos into the oven - bake for approximately 10 mins or until golden and crispy. Take out after 5 minutes and move around if they are not baking evenly
Remove the nachos from the oven once baked and allow to cool
Slice and dice your capsicum, onion, and tomato
Add a splash of oil to a large pan and add in your vegetables
Stir through the crushed garlic
Add the crushed cumin and herbs and stir through
Place your pan on a medium heat
Once the pan is warm - add your Mexican seasoning and stir through
Add the beef mince and cook for 10 minutes until the meat has browned
Whilst the meat is simmering add the black beans, kidney beans and sweetcorn and stir through
Add the passata or tinned crushed tomatoes and stir through
Allow to simmer for a couple of minutes
Serve the home made nachos with the meat and bean mixture. Add cheese, coriander, sour cream and lemon to taste
