
Excellent Enchiladas
These enchiladas are a great recipe for children to help with! They are packed full of nutritious foods and flavour and something that the whole family can enjoy!
Ingredients
- 1 bunch Corriander
- 1 Brown Onion
- 1 Capsicum (any colour)
- 3/4 cup Light sour cream
- 1 tin Tinned, chopped tomatoes
- 1 Lime (cut into wedges to serve)
- 1.5 Cup Finely grated cheddar
- 1/2 tin Mixed, cooked mexican bean mix (rinsed and drained)
- 150 g Cooked rice
- 1 tbsp Oil
- 8 Soft tortilla wraps
- 200 g Meat (we are using chicken for this recipe but you can adapt it or use a veggie/vegan protein also)
- 1 tsp Paprika
- 2 tsp Mexican spices
- 2 cloves garlic (or crushed equivalent)
- 1 Pinch Chilli flakes (optional or you can use fresh)
Instructions
- Preheat oven to 180°C. Grease a large, shallow baking dish
- Heat oil in a frying pan over medium heat
- Fry chicken in 1/2 the spices for approx 10 mins or until cooked
- Remove the chicken from the pan and add the onions and cook for until softened
- Stir in the tomatoes and simmer. Add the rest of the spices and allow flavours to combine
- Prepare rice as per packet instructions
- Roughly chop half the coriander and stir into bean mixture with rice. Season.
- Warm tortillas as per packet instructions
- Lay one on a board and fill with 1/8 rice and bean mixture (in a sausage shape in the middle)
- Add 1/8 of the chicken in sauce mixture
- Roll up (as shown in picture) to enclose filling and place into dish - seal down.
- Repeat another 7 times until all the mixture is used up and you have made 8 enchiladas
- Pour over remaining tomatoes and sprinkle over cheese
- Bake for 15-20 minutes or until cheese melts and is golden
- Top with sour cream and remaining coriander, and serve with lime wedges
